Ingredients:

  • 1/4 cup avocado oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1/2 tsp smoked paprika
  • 1.5 lbs halibut fillets
  • 1 tbsp unsalted butter, melted
  • 1 lemon, cut into wedges
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Pat the halibut fillets completely dry with paper towels to ensure a proper sear.
  2. In a small bowl, whisk together the avocado oil, lemon juice, minced garlic, oregano, salt, pepper, and smoked paprika.
  3. Brush the marinade generously over all sides of the fish and let it sit at room temperature for 15–20 minutes.
  4. Preheat the pellet grill to 400°F (204°C) using Alder or Apple wood.
  5. Place a cast iron skillet or perforated grill tray inside the grill during the preheating phase to ensure a hot searing surface.
  6. Carefully place the fillets on the hot surface, close the lid, and cook for 4–6 minutes without moving them to establish a crust.
  7. Flip the fillets and baste with melted unsalted butter.
  8. Continue cooking until the internal temperature reaches 130°F-135°F.
  9. Garnish with chopped fresh parsley and serve with lemon wedges.
