Ingredients:
- 1/4 cup avocado oil
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1/2 tsp smoked paprika
- 1.5 lbs halibut fillets
- 1 tbsp unsalted butter, melted
- 1 lemon, cut into wedges
- 1 tbsp fresh parsley, chopped
Instructions:
- Pat the halibut fillets completely dry with paper towels to ensure a proper sear.
- In a small bowl, whisk together the avocado oil, lemon juice, minced garlic, oregano, salt, pepper, and smoked paprika.
- Brush the marinade generously over all sides of the fish and let it sit at room temperature for 15–20 minutes.
- Preheat the pellet grill to 400°F (204°C) using Alder or Apple wood.
- Place a cast iron skillet or perforated grill tray inside the grill during the preheating phase to ensure a hot searing surface.
- Carefully place the fillets on the hot surface, close the lid, and cook for 4–6 minutes without moving them to establish a crust.
- Flip the fillets and baste with melted unsalted butter.
- Continue cooking until the internal temperature reaches 130°F-135°F.
- Garnish with chopped fresh parsley and serve with lemon wedges.
