Ingredients:

  • 1.5 cups ketchup
  • 0.5 cup apple cider vinegar
  • 0.25 cup molasses
  • 0.25 cup dark brown sugar, packed
  • 2 tbsp Worcestershire sauce
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp black pepper
  • 0.25 tsp cayenne pepper
  • 0.5 tsp salt

Instructions:

  1. Combine the ketchup, apple cider vinegar, molasses, brown sugar, and Worcestershire sauce in a saucepan. Whisk vigorously while cold to ensure the brown sugar is fully broken down and the molasses is evenly distributed.
  2. Stir in the smoked paprika, garlic powder, onion powder, black pepper, cayenne, and salt. Whisk until the spice blend is fully incorporated and no dry clumps remain.
  3. Place the pan over medium low heat.
  4. Bring the mixture to a very gentle simmer. Note: Avoid a hard boil, as the sugars can break or burn.
  5. Stir frequently for 8–10 minutes.
  6. Watch for the color change. The sauce is ready when it transitions to a deep mahogany color.
  7. Check the thickness. It should coat the back of a spoon in a smooth, silky layer.
  8. Remove from heat immediately.
  9. Let it cool for 5 minutes before bottling. It will thicken slightly more as the temperature drops.
