Ingredients:

  • 2 lbs boneless skinless chicken thighs, trimmed
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1/2 cup sour cream, full fat
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp cracked black pepper
  • 1 sleeve (1.5 oz) Ritz Crackers, roughly crushed
  • 4 tbsp unsalted butter, melted
  • 1/2 cup grated Parmesan cheese

Instructions:

  1. In a medium mixing bowl, whisk together the condensed cream of chicken soup, sour cream, garlic powder, onion powder, smoked paprika, salt, and pepper until the mixture is uniform and lump-free.
  2. Place the chicken thighs in the bottom of the slow cooker in a single layer. Pour the creamy base over the top and spread evenly with a spatula.
  3. Seal the lid and cook on Low for 6 hours (or High for 3 hours) until the chicken reaches an internal temperature of 165°F (74°C) and pulls apart easily with a fork.
  4. In a small bowl, combine the crushed Ritz crackers, melted butter, and grated Parmesan cheese.
  5. Sprinkle the cracker mixture evenly over the cooked chicken. Place under a broiler for 10 minutes, or in a hot oven, until the topping is golden-brown and toasted.
