Ingredients:
- 1 lb lean ground beef
- 3 tbsp taco seasoning
- 16 oz traditional refried beans
- 1 cup frozen corn
- 10 oz diced tomatoes with green chilies, drained
- 32 oz frozen tater tots
- 2 cups shredded Mexican cheese blend
- 1 tbsp olive oil
Instructions:
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until thoroughly browned. Drain any excess grease.
- Stir taco seasoning and a splash of water into the browned beef until coated and fragrant.
- Spread the refried beans in an even layer across the bottom of a 9x13 inch baking dish.
- Layer the seasoned ground beef over the beans, followed by the drained diced tomatoes and corn, spreading evenly.
- Sprinkle half of the shredded Mexican cheese over the beef mixture.
- Arrange frozen tater tots in neat, tight rows across the top of the casserole.
- Bake at 400°F (200°C) for 30-35 minutes until the tater tots are golden brown.
- Remove from oven, sprinkle the remaining cheese on top, and bake for another 5 minutes until the cheese is bubbly and melted.
