Ingredients:

  • 2 lbs ground beef (80/20 lean)
  • 1 cup chunky salsa
  • 1/4 cup beef broth
  • 3 tbsp taco seasoning
  • 1 tbsp fresh lime juice
  • 2 cloves garlic, minced

Instructions:

  1. Place the raw ground beef into the bottom of the slow cooker and pat it down into an even layer. Note: Keeping it flat helps it cook evenly.
  2. Pour the chunky salsa, beef broth, taco seasoning, minced garlic, and lime juice directly over the top of the beef.
  3. Cover with the lid and cook on High for 4 hours until the meat is fully cooked and fragrant.
  4. If you prefer the Low setting, cook for 8 hours.
  5. Use a wooden spoon or fork to break the beef into small, uniform crumbles.
  6. Stir everything together to combine the meat with the sauce.
  7. Check the liquid level. If it's too runny, leave the lid off.
  8. Cook on high for an additional 15-30 minutes until the sauce is thick and glossy.
  9. Stir one last time and remove from the heat.
