Ingredients:

  • 1/4 cup olive oil
  • 2 tbsp fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1.5 lb boneless skinless chicken breasts

Instructions:

  1. Place chicken breasts between two sheets of plastic wrap and use a meat mallet to gently pound the thicker end until the entire piece is a uniform thickness of about 3/4 inch.
  2. Whisk together the olive oil, lemon juice, minced garlic, dried oregano, smoked paprika, salt, and black pepper in a bowl.
  3. Place the chicken in a Ziploc bag, pour in the marinade, massage to coat thoroughly, and refrigerate for 30 minutes.
  4. Preheat the grill to medium-high heat and lightly oil the grates to prevent sticking.
  5. Place chicken on the grill and sear for 5–6 minutes per side until deep mahogany-colored grill marks appear.
  6. Remove the chicken from the grill when the internal temperature reaches 160°F (71°C).
  7. Transfer the chicken to a plate and let it rest for 5 minutes to allow the internal temperature to reach 165°F (74°C) and redistribute the juices.
