Ingredients:
- 1/4 cup olive oil
- 2 tbsp fresh lemon juice
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1.5 lb boneless skinless chicken breasts
Instructions:
- Place chicken breasts between two sheets of plastic wrap and use a meat mallet to gently pound the thicker end until the entire piece is a uniform thickness of about 3/4 inch.
- Whisk together the olive oil, lemon juice, minced garlic, dried oregano, smoked paprika, salt, and black pepper in a bowl.
- Place the chicken in a Ziploc bag, pour in the marinade, massage to coat thoroughly, and refrigerate for 30 minutes.
- Preheat the grill to medium-high heat and lightly oil the grates to prevent sticking.
- Place chicken on the grill and sear for 5–6 minutes per side until deep mahogany-colored grill marks appear.
- Remove the chicken from the grill when the internal temperature reaches 160°F (71°C).
- Transfer the chicken to a plate and let it rest for 5 minutes to allow the internal temperature to reach 165°F (74°C) and redistribute the juices.
