Instructions:
- In a large bowl, beat the softened cream cheese and butter together on medium-high speed until pale and smooth, approximately 3 minutes.
- Add the egg, vanilla, and almond extract to the butter mixture. Beat until just incorporated, scraping down the sides of the bowl.
- Turn the mixer to low speed and gradually add the dry cake mix. Mix until a soft dough forms and no dry streaks remain.
- Cover the dough and refrigerate for at least 2 hours. This is essential for dough stability and ease of handling.
- Preheat oven to 350°F (175°C). Use a 1.5 tablespoon cookie scoop to form balls. Roll each ball first in granulated sugar, then heavily in powdered sugar.
- Place balls on parchment-lined baking sheets. Top with festive sprinkles. Bake for 10-12 minutes until the edges are set but the centers remain soft and crackled.
