Instructions:

  1. In a large bowl, beat the softened cream cheese and butter together on medium-high speed until pale and smooth, approximately 3 minutes.
  2. Add the egg, vanilla, and almond extract to the butter mixture. Beat until just incorporated, scraping down the sides of the bowl.
  3. Turn the mixer to low speed and gradually add the dry cake mix. Mix until a soft dough forms and no dry streaks remain.
  4. Cover the dough and refrigerate for at least 2 hours. This is essential for dough stability and ease of handling.
  5. Preheat oven to 350°F (175°C). Use a 1.5 tablespoon cookie scoop to form balls. Roll each ball first in granulated sugar, then heavily in powdered sugar.
  6. Place balls on parchment-lined baking sheets. Top with festive sprinkles. Bake for 10-12 minutes until the edges are set but the centers remain soft and crackled.
